#2 Food Fest

As promised, here is a continuation of my recent encounters with food…


This is a dish of fried green bananas. In Kenya, we call it matoke. It is a favourite among the Kisii tribe and can be enjoyed in various forms. Ideally, I use matoke as the main starch in a dish with chicken stew and green vegetables – preferably fried kale or steamed spinach. Matoke can be prepared like mashed potatoes and served as such or fried with lots of onion and tomato as I often do.
